Strawberries, chocolate and hazelnuts? This pair of summery desserts not only combines a few of my favorite flavors, it also features a dairy-free pie crust that uses a smart technique to create a flaky, buttery crust without vegetable shortening or margarine.
This recipe comes from Laura at The First Mess, who adapted a vegan pie crust recipe from Food52 for the hand pies, which she makes with whole wheat pastry flour. Instead of using vegetable shortening or margarine, you chill coconut oil until it is solid enough to cut into the flour, for a dairy-free, easy-to-roll pastry dough. Smart!
And because pie is always better with ice cream, she serves the hand pies alongside a scoop of vegan chocolate hazelnut ice cream made with coconut milk and toasted hazelnuts. There is something about this combination that demands to be eaten outdoors on a warm summer night, don't you think?
