Usher in Spring with This Grapefruit & Campari Sorbet

This Sunday, March 20, marks the first official day of spring! If you're as excited as I am about this, then you'll want to celebrate accordingly. How about a nice, refreshing grapefruit and Campari sorbet? It's light, bright, and boozy — just what we need to say goodbye to winter and hello to spring.

While you might worry that grapefruit and Campari would make for an unpleasantly bitter sorbet, don't worry — the sugar and whipped egg white help balance things out to create a soft, subtle balance of flavors.

This sorbet would be perfect served on its own (with a bit of fresh mint), but it would be even better served in a Champagne flute and topped with bubbly.
