Even when you don't have the proper ingredients in the house, sometimes you just can't fight a craving. This pizza crust alternative allows even last-minute cooks to make something at home instead of ordering in. Can you guess what it's made from?
Instead of prepping dough or popping it out of a can the idea behind this recipe is to shred potatoes. For starters it gives you a good reason to buy one of those cool tools (though a food processor can do something similar), and who doesn't love the bite that crispy on the outside, chewy on the inside potato gives you?
The whole shebang is made in a pan on the stove, though you could also use the grill and likewise your oven with OK results. After the potatoes are crisped a bit the toppings are added and it all comes together just like a traditional pizza.
The best part is the miniature versions that look perfect for brunches or party purposes of all sorts. Go for the pizza, stay for the pictures of the small pint size portions. You'll forget all about the potato!

You can also do a REALLY good low carb version with cauliflower, an egg and mozzerella. I was surprised when I tried it- normally it would seem a bit off, but it was surprisingly good.
Unprofessional Cookery
I thought the surprise ingredient was going to be spaghetti squash! I think I may try that before trying potato.
I had the same thought as BetsyG about the spaghetti squash. I'm thinking the natural sweetness would be pretty good!
This is great recipe for those of us who eat paleo/primal! Thanks for posting it.
My jaw just dropped. I really like potato! I really like pizza! But if I bring another contraption into the house (just got an ice cream maker) DH may not like it. I'd have to sneak it in... yeah, that's it.
Of course, I could try to use food-processor-grated potato and pretend I'm making a latke with pizza toppings. Worth a shot.
meansoybean, you gave me an idea. What about potato slices done really thin on a mandolin?
Ms. Vickie - I had the same idea, though I might suggest rinsing them first to make sure they don't get too gummy.
meansoybean - If you want some ultra shreds without the food processor you could also use a handheld cheese grater with decent results!
There's a farm market/deli here that does a zucchini crust pizza. Same concept and it tastes just heavenly!
I have a mandolin, i can make a vegan one. good for wheat intolerance!
also to cook the potatoes, mash them and then grill that and the toppings..mmm!
I've made this with a shredded zucchini crust with great results (also stovetop, in a pan). It's a bit healthier than potato....but the potato looks yummy too! Depending on the toppings, it could be a great breakfast dish.
What a lot of great ways to make pizza without dough. I will use my trusty grater (the coarse side) as I already make potato pancakes like this but never thought of putting on toppings. Yummeee!
I use potatos as a crust in many items as it is a truely gluten free option and who doesn't love the taste of potatoes. have also made dessert crust using sticky rice, very yummy with creamy fillings
i thought it was going to be clear rice noodles! what a great idea
I need to get this machine! I'd imagine it's also great for making latkes.
Until then I'll stick with my paleo-friendly pizza crust:
