Brussels sprouts are back, and I couldn't be happier. In the Fall it's not uncommon for me to make a meal of roasted brussels sprouts, browned and crispy with a little bit of parmesan cheese. I've never had them with apples, although I know that's a favorite combo for some people. This recipe from Oh My Veggies looks so simple and delicious, I think I'll have to try it!
I tend to like my brussels sprouts on the savory side, but this slightly sweeter version—make with apples, walnuts, cranberries, and a little bit of maple syrup—seems like a nice change of pace. It makes for such a beautiful side dish, too!

I do something very similar but use pears instead. Delicious.
YES! I follow her blog and made this AND loved it. Great combinations that I wouldn't have tried otherwise. I think figs would also work well.
sounds so delish! we have a VERY similar dish with practically uses the same ingredients, except its flavored with leftover juices from pan-frying beef or pork (obvi this no longer makes it vegan or vegetarian, but it's SO good!)

I LOVE roasted Brussels sprouts and have never thought of putting them together with apples. Sounds delicious and looks oh so pretty!
