Turn Beets into a Crunchy, Addictive Snack

For the most part, beets are pretty divisive; either you love them or hate them. Their earthy flavor can sometimes be poetically referred to as "tasting like dirt," but when cooked correctly — aka crisping them up into crunchy, salty chips — these sweet root veggies can make even the most adamant beet-haters change their minds.

To make these addictively crunchy chips, you'll first need to peel and thinly slice the golden beets. You then toss them in a mixture of olive oil, salt, and spices, and bake them in a 325°F oven for about 40 minutes.

But the best part about these chips? The spicy goat cheese dip you get to dunk them in once they're ready. Mix soft goat cheese with plain greek yogurt and fresh herbs for a creamy, tangy, flavorful dip.
