We have had Smitten Kitchen's chocolate icebox cake on the brain for some time. It's so easy and completely retro: chocolate wafer cookies layered with barely sweetened whipped cream until they melt into one chocolatey, creamy, fluffy cake.
But then we saw a mini version - this cupcake - and we were sunk. These are going to happen this weekend, promise.

I have been making these for years. They are amazing. Super yummy!
I used to make those cakes to take to potlucks and every now and then I still do. It may be very "suburban" on the sophistication scale, but there's never any leftovers.
I made these last night for a dinner party tonight, I'll let you know how they work out!
