Inspiration comes from surprising sources, and this one came from a Klondike Bar.
If you've turned on a TV recently, you've probably seen ads for their new brownie ice cream bar with....wait for it...fudge in the middle. I'm totally grabbing this idea and running with it.
Just think: what else could we hide in the middle of an ice cream sandwich?
This was already kicking around in my head when I discovered someone else stuffing their ice cream sandwiches: Jeni Britton Bauer of Jeni's Splendid Ice Creams!
Her new cookbook has already been the source of much inspiration. Paging through it once again the other day, I spotted a picture of Jeni adding spoonfuls of what looks like berry preserves to the middles of her macaroon ice cream sandwiches. (The photo is on page 190 if you have the book!)
So, soft fudge and summer preserves are a go. Maybe lemon curd? A dab of peanut butter or a swirl of honey?
This is like a treat within a treat, made even more fun if you keep the secret to yourself and let your lucky ice cream sandwich recipients discover the surprise for themselves. I love it.

I am definitely a fan of being "inspired" by Klondike bars rather than buying them, thanks to the recent commercials in which schlubby men are celebrated for the horrible struggle of listening to their wives speak for 5 seconds. In an America where most married-people grocery shopping is still done by women, I can't imagine what the marketers were thinking with such a misogynist campaign. Unbelievable.
