Kate of the lovely food blog Cookie + Kate wrote to us last week to share this homemade pecan butter she made. It was something of a revelation — we've tried peanut, cashew, almond, and pistachio butters — why not pecan too?
Kate writes:
I recently tried making pecan butter at home and fell head over heels for it. It's incredibly easy to make and produces creamy, silky smooth nut butter, unlike the peanut butter I've tried to make at home. It takes about 25 minutes, and about 15 of those minutes are spent in the food processor. Though I've never seen pecan butter for sale, I've heard that it is quite expensive so making it at home is a more economical choice. One cup of pecan butter made with local, organic pecans cost me $7.
This sounds totally delicious. Pecans can have a natural sweetness that we really love. We're also now thinking about all the others nuts we've never used for nut butter — toasted black walnuts, anyone? How good would that be with raspberry jam??

Pecan butter is so delicious and so easy to make. Definitely something pecan lovers should try!
I've heard that, like with walnut butter, you get better results by adding some cashews to offset the bitterness that pecans/walnuts can have.
Doesn't Trader Joe's carry pecan butter?

I made toasted hazelnut butter for a chocolate cake plating a few weeks ago. Absolute heaven. Everything I ate after that was just a vessel for hazelnut butter.
If you're trying walnut butter, give them a good soak in cold water first to draw out the tannins.
