There are some wonderful foods out there that come rolled up in something else. Chimichangas, cabbage rolls, and the vegetable summer rolls we posted this week.
But putting in the right amount of filling can sometimes be hard. Too little, and it's all wrap, no flavor. Too much, and you fight to get the roll rolled. We have a few tips...
- Whether you are rolling a rice paper wrapper or a tortilla, you want one edge of the wrap to cover the filling ingredients when you pull it over. That way, you can fold the sides in and have a nice package rather than filling spilling all over the place.
- Start with less filling than you think you need. You can always add more.
- When you find the perfect amount, loosely measure it in a tablespoon or the palm of your hand before you roll it up, so you can gauge the remaining rolls.
- Don't worry about making sure your filling fills the exact number of rolls in the recipe. Chances are, you have extra tortillas or wrappers. It's easier to deal with excess filling than too few servings.
