We've all heard the expression about fish beginning to stink after three days, but my favorite poissonière informs me it is actually two. Nevertheless, she gave me a tip on how to store fish if it has to be kept the refrigerator for more than just a few hours...
Unwrap it and place it between two plates in the refrigerator. "Otherwise, it will suffocate and begin to stink!" she says. The plates allow the air to circulate, preventing it from developing a fishy smell, which we all know is a sign that fish is not fresh. I tested her advice. Works like a charm -- the refrigerator doesn't smell like fish and the fish still looks clear-eyed and fresh 24 hours later.
