We latched on to the recipe for Peanut Butter Bittersweet Chocolate Chip Cookie Bars that Sarah Phillips gave us yesterday, and when we make them we're going to follow this tip from Dorie Greenspan. She says:
It’s always seemed a shame that we use great ingredients to make cookies and then add sub-par storebought chocolate chips to the dough. Unfortunately, while chocolate chips are super convenient, they’re not made from super-quality chocolate.

The best chips are homemade chips cut from a piece of your favorite chocolate, the chocolate you like to munch on. To make the chips, just use a serrated knife to chop the chocolate into chip-size bits. Don’t worry about making everything the same size, the fun of homemade chips is that some are big and some are small, that some will melt into the dough and some will stay a little chunky. When you use homemade chips, every bite is a surprise.

I find that when I make my own "chips" I like to use a fork instead. The chunks are more uniform and come out just the right size. Cutting the chocolate with a knife results in lots of little shavings that melt instantly and make a mess.
I would like to point out that Ina Garten, the queen of "Good" ingredients, used chocolate chips on her show (Hershey brand, I believe) to make a ganache.
