Straw Mat from The ...

I have a few methods I really like but this is great. I like using skirt or flank steak for this, but other cuts will work nicely. (Flatiron would do very well) I tend to guesstimate amounts.
I make a marinade from 2 tablespoons of soy sauce (light soy sauce works well too), 2 tablespoons sriracha sauce, 1 tablespoon sesame oil, 4 tablespoons of rice vinegar, and several crushed cloves of fresh garlic. (I take several to mean LOTS)
Again, I'm guesstimating here. I usually put the steaks in a large plastic container, add the marinade ingredient by ingredient, cover the container, and shake it so that all surfaces are covered. Then I'll let the steaks sit in the refrigerator for a while. Sometimes 30 minutes to an hour, though usually I'll do this the night before I'm going to grill them.
I like grilling the steaks on a Le Creuset grill pan on medium to high flame - this will give nicely seared grill marks but keep the center rare.
Favorite preparation for steak? Ummm, salt and pepper on a strip or ribeye. And honestly, I love pan-roasting as much as grilling. Cast Iron screaming hot for 4 minutes, flip and 400 degree it in the oven for 5-7 minutes.
Flank with a ginger/garlic/soy/worcestire is tasty on the grill too.
Then again, I also did this.
Lotsa kosher salt and black pepper on a bone-in ribeye, grilled.
I would have to say that my favorite way to prepare steak is to marinate and grill. My favorite marinade always contain garlic and a bit of a kick (whatever spices strike my fancy at the time, no specific recipe). I always eat my steak medium rare.
I also love steak served with grilled onions or in a nice merlot sauce.
My guests favorite is my skirt steak with chimichurri sauce - the only seasoning I use on the steak is Grill Mates Montreal Steak blend.

My local butcher has house marinades he'll put meat in right when you buy it. By the time I get home and get the grill going, the steak is perfectly marinated!
My favorite way is how my Boyfriend does skirt steak fajitas - a quick marinade of lemon and lime juice, brown sugar and all kinds of "secret" spices, then grilled to a perfect medium rare. I would love to surprise him with this book!
I love to sear a sirloin in a cast iron skillet with salt and pepper then refrigerate it overnight. The next day, I bake a sheet of puff pastry (cut into 4 rectangles), then top it with sliced sirloin and some greens dressed with balsamic vinaigrette. Delicious open faced steak sandwiches!

A little olive oil and salt & pepper on a skirt steak grilled for about 3 minutes a side!
And there is a rub called Uncle Birch's that is great when we get home from work and need a quick meal.

Lately our Sunday dinners involve grilled ribeyes, baked potatoes, grilled vegetables, fruit salad. Couldn't be simpler, but sure does taste great!

To stay away from the heat my boyfriend and I used a grill pan the other day for spice-rubbed steaks, complemented by an awesome salsa of garlic, grilled corn, avocado, green onion and lime. It was very tasty.

I'd love to learn new ways of making steak. I feel limited because it seems so complicated, but I cooked a bison steak successfully once, marinated and then cooked in a cast iron skillet.
I love to take a good thick cut of steak, pat in some Santa Maria type seasoning from our butcher's market (a liberal amount, which is new for me because I never really used much salt in the past)
let that sit getting to room temperatures while you marinade sliced yellow onions in a mixture of basalmic vinegar and basil olive oil.

to cook the onions till golden.
We let everything rest on the same plate and serve it up with some fresh salad on the side, maybe some roasted potatoes.
Now that I've read the new tips, I'm going to finish it with a dallop of butter while it rests - that sounds perfect!!

I was raised a vegetarian, so I have come late to the meat party. But last month I finally joined the other side at the age of 32, when I made my first steak.
So my favorite way to prepare a steak is this: go to the best butcher you can find, preferably one recommended by carnivore foodie friends. Plead vegetarian-until-recently ignorance but intense interest, and the butcher will direct you to the best cut available and arm you with cooking tips. Go home, fire up gas burners, lovingly take beef cut (probably hanger) out and let it adjust to its new environment (while coming to room temperature). Salt and season. Heat up non-non-stick pan, add some oil, and sear on both sides. Finish in oven. Deglaze to make a pan sauce, and pour liberally over the now perfectly medium to medium-rare steak. Slice against the grain. Open bottle of wine, turn on John Coltrane, and you're ready to go...
On the grill. Marinade first.
When I grill steak, I keep it simple yet very tasty. I use seasoning salt, garlic powder, salt and pepper. I grill it until the heat burns the fat to a crisp so that the inside part that's not burnt melts in your mouth. I usually cook them medium rare and let them sit on the counter for 5 minutes, just enough time for the juices to settle back down from the surface. Very yummy!!
A fillet mignon rubbed with garlic powder and put on the grill for a medium finish; eaten with a little A1 sauce. Easy, basic and delicious.
Or a heartier cut, cut into chunks, marinated in teriyaki sauce and skewered on the grill with pineapple, onion and multi-colored bell peppers.

Salt lavishly, cut up onions and place them on top, then use an electric grill (like the GeorgeForeman) and cook briefly. It's quick and tasty with a salad.
Always on the grill for the best flavor and ease of cooking.

My favorite way to prepare Filet Mignon:
1) Heat a cast iron skillet with a small amount of olive oil until the oil shimmers.
2) Place steaks in skillet, cook on both sides until done to the preferred degree of rareness.
3) Remove steaks, plate them, and hold in a warm oven while you prepare the sauce.
4) Add a generous handful of chopped shallots and sliced mushrooms, and 2 T unsalted butter. Stir with a wooden spoon until cooked through (this will take only a short while).
5) Deglaze the skillet with about 1/4 cup of port, Madeira, or dry sherry.
6) Pour sauce over the steaks and serve.
Whe not grilling, sear in a cast iron pan and then finish in the over to the desired doneness.
Seared on a grilling pan, then 5 minutes at 400 degrees in the oven. Let it sit, tented with foil for 5 minutes, then parsley or chive butter and Malden salt. Yum.

Thick filet, fresh ground salt and pepper and just a wee bit of cumin. Grill for one minute on each side. Perfection!

My favorite way to grill a steak is to use any seasoning you like on the steak, but remove the grill plate and place steak directly on the briquettes. Not using the grill plate eliminates the splash from drippings that causes a flame to rise and create an uneven cooking. Cook as long or short a time as desired, flip once and you will get a perfect steak every time.
i don't have a single favorite way... i like to experiment with a new homemade rub or marinade every time!
Yea, I'm not the only one confessing to bottled: grill mates montreal seasoning does it for us! On the grill of course, but if it's nasty outside, the broiler does ok.
I like steak marinated with soy sauce, I like it broiled with salt and pepper and I like it BBQed. I think I like steak anyway it is made.
We marinate for a couple of hours then grill, I don't think most steaks have a good flavor unless they are marinated first.
I don't have a grill :( so I usually prepare steaks as follows: I love to experiment with different marinades, last night I made one with cracked black pepper, lime and ginger. Marinade at room temp for at least one hour. Then heat up my panini machine and grill it with the top up. After a few minutes I turn it over and cook it to medium rare. I then take the pan juices and made a reduction sauce and pour them over the steak.
We've been following these simple steps to grill excellent steaks for many years:
1. Allow the steaks to stand at room temperature for 20-30 minutes before grilling.
2. Lightly coat each steak with olive oil (which helps with searing and keeps them from sticking to the searing hot grill) then season the favorite way for each dinner guest, which for me is light salt, fresh ground pepper and maybe fresh chopped garlic.
3. Grill over a direct-medium fire (350°F to 375°F) on a covered grill, medium-rare for my steak. (For grilling times we use the cookout calculator at charcoalbob.com to grill them just the way each guest likes their steak.)
4. Allow the steaks to rest for 5 minutes after grilling to allow the juices to settle.
5. Give thanks, and enjoy!
Marinated a few hours in Worcheshire sauce, minced onion, pepper and water to cover. Grill to desired color and yum!!!
I only know how to sear on a cast-iron skillet, I would love to win the book so that I can learn more ways to cook steaks since today's economy makes it quite expensive and a rare treat to afford good-quality meat!
Grilled, medium rare with only a good dosing of salt and pepper; allowing to rest at least 5-10 minutes before cutting into it.
I love to marinade in ginger, garlic, soy sauce, a little brown sugar, and a little water. Then cook on an outside grill or a georgeforeman type grill. Yum!

i am a recovering vegetarian...very inexperienced with steak. i find i love steak in almost any form, especially if there's horseradish or mustard involved.

red wine-based marinade, with caramalized onions. The alcohol keeps it tender.

Plopped on a grill to med rare and served with a side of carmelized onions and sliced mushrooms sprinkle with a dash of salt.

I make up a fairly cheap, marinade concoction of italian dressing, fresh, minced garlic, chopped red onion, and worcestershire sauce that I soak the steaks in overnight. In the morning I turn them over and let them soak some more in the marinade. When it comes time to cook them, hubby will grill them over medium heat until they are a nice medium to medium well.

We like to either broil or grill our steaks with salt and pepper. Sometimes I marinate it in a soy sauce based sauce. Otherwise, we like to have it with sauteed mushrooms.

Sate Seasoning from Penzeys Spices
throw any frozen steak...in a heavy ziploc bag. Pour a zesty italian salad dressing, 2 cloves of fresh crushed garlic, some salt and pepper...and marinade. Place bag with frozen steak and marinade in fridge overnight. Once almost thawed, remove from bag, but save marinade. Cut steak into thin stris and cook in hot pan, with marinade added to steak as it is cooking. Put a few pats of butter on steak. Turn once...till it's cooked just how you like it.

Heat the cast iron skillet until it smokes and throw the ribeye on. I don't salt, but I do pepper.
I top it off with blue cheese, I know that some people think this is blasphemous with a good piece of steak, but I love the two together.
I've never found anything I liked, so I grill my steaks naked :-)
Oops - I just saw what I wrote and realized how it sounds. I meant that the steaks are naked - not me!!
Marinade steaks in soy sauce, picked garlic and a bit of honey overnight -- i use a zip-top bag so i can remove all the air. Remove the steaks from the refrigerator a half hour or so before you want to start cooking so they can get to room temperature. Remove from bag and pat dry with paper towels. Preheat the oven to 425 or so.
Get a pan (not non-stick) blazing hot, add canola oil to coat the bottom of the pan; it should begin to shimmer and smoke almost immediately. Put the steaks in the pan, cover with a splatter screen, and leave 'em alone for two minutes. Flip them over and immediately toss the pan in the oven. About four minutes later (depending on the thickness of the steak), remove from the oven (remember tat handles are hot!) and pull the steaks to rest (cover them with foil).
Meanwhile, deglaze the pan with a bit of chicken stock and red wine; stir in a bit of butter. I like to put the steaks (and the attendant juices) back into the pan to warm.

My favorite is when my brother prepares it for me. I want to give this to him.
Grilling is my favorite, Rib eye, never do anything special to it, like the taste as is. Cooked to almost well done. Also make a lot a Sirloin fillet, pan fried. Tenderize it in Montreal Seasoning, about 4 hours each side. Had Filet mignon for the first time a few weeks ago. WOW! Again grilled it simply.

In a bowl, make a dressing with add a tiny amount of sugar, a teaspoon or two of Sambal Oelek (garlic/chili paste), some lime juice and handful of chiffonade-cut cilantro and/or mint.
Grill stake to medium rare, rest, slice, spoon dressing over top.

I like the sear of a panfry, locks it all in better than the zzexxy grill... heat oil to hot in a hot pan with a branch of rosemary, sprinkle Maldon sea salt and ground black pepper on the side of the steak going face down in the pan, repeat on the side facing up so it's ready when you want to turn it (after a minute or two)... turn, after another minute or two, turn again, poke with finger, decide whether to give it more time, lower heat a bit and cover (since it's sealed and seared no fear of steaming it), when it's at the right poking-the-finger-feel (too mushy too rare, too rubbery too done, you'll learn what works for you), remove and let it sit for god's sake, make the salad then (and when it's steak the dressing gets a little mustard)
deglaze pan with a little wine or marsala, a sage leaf or two and big gob of butter, throw in the juices that have leaked out of the steak... those won't get sucked back in... and when it feels saucy, pour over (if you think you burned it, strain it, NO sweat)
if there are not the same amount of steaks as people, go ahead and slice them just thicker than thin and arrange on plate with pan sauce poured over and some fresh parsley sprinkled on, that way people get the well or medium or rare they want and they are not facing down a GREAT BIG PIECE OF MEAT
and grass fed beef is the only kind to bother with...

I cook up steak the purist way - on a wood-fire or charcoal grill with butter and lemon juice!
I marinate it in balsamic vinegar overnight, then crust it in sea salt, rosemary and fresh garlic before cooking.
Salt 'n Peppa, charcoal grill, medium done. Simple is always best or else you mess up a good piece of steak!

I pan fry my steak over high heat in my trusty cast \iron skillet. I get the seared flavor without the char.
Salt and pepper, throw it on the charcoal grill. When the blood wells up, flip it over. When it wells up again, it's done. Mmmm....like butter!

I marinate the steaks in a bit of olive oil, maybe with a dash or two of Worcestershire sauce, and a bit of some kind of rub (lately it's been Montreal). Hand 'em over to hubby to grill 'em rare and we fall in love all over again.
I am more than ready to broaden our horizons though!

I love putting some montreal steak seasoning on my steak and then grilling it to no more than medium. If it is done more than medium, then it is burnt (but I'd still eat it, too expensive to waste :P) Sometimes I'll use some A1 at the table, but usually not.
I like mariante it in herbs and then cook it in olive oil with onions and garlic. I am always also using either Lawry's or Montreal Steak Seasoning.

salt a cast iron grille, heat, bring steak to room temperature seasoned with salt and pepper, put steak on hot grille, remove when done to taste and enjoy with a squirt of lemon.

I love Sirloin. I marinate overnight if I think ahead with soy sauce and garlic. Then I grill on a well seasoned hot grill till medium rare. Yum!

I like to grill my steakes with salt on pepper on the outside Bar-b-que grill. I use real charcoal. Maybe not so good for you but oh so yummy.

I start with a good rib eye or filet, grill to just before medium doneness, adding a bit of salt and pepper a minute or two before removing it from the grill. Add a bit of butter and let the meat rest. Saute fresh mushrooms in butter and add a bit of salt and pepper. Serve on top of the rested meat. Salt and pepper is all you need to bring out the flavor of a great piece of meat. Add a fully loaded baked potato and a veggie and you have my favorite meal! Thank you for the opportunity to win!
Marinate it in my secret sauce then toss it on the grill until its just right, not too dried up but not real bloody. Pour some A-1 on it and it's ready to eat!
I like round steak stuffed with stuffing, and covered in gravy. My mom said to correct the tough meat, cover it in more gravy!

My favorite way to make steak is to hand it over to my husband to bbq. he's really the one that needs the book :)
My favorite way to cook steak is to pan sear one side with high heat, flip, then into the oven on high heat, then remove and let rest. Times are usually the same for all three stages, 4-4.5 minutes depending on thickness of the meat. I like mine thick. Temp in the oven around 450. Seasoning is season salt and pepper.
