One of the favorite things around our house, (especially during the summer months) is salsa. We can't get enough and there's always a jar of it in the fridge waiting for a fresh corn chip (thanks to our local grocer) to take a plunge into. But having a constant rotation of chips in our home means...
... that at some point we end up with a batch that's a little soggy or goes stale. Humidity had gotten the best of one of our recent bags, so we did what any penny pinching person would do... put them in a zip top bag and beat the daylights out of them with our rolling pin!
In the photo above we used them to coat our chicken strips before baking. They were a delicious addition to our meal! You can also use them to coat pork or fish and even add them to meatball or meatloaf mixtures, just as you could breadcrumbs. It's a great way to add an extra layer of flavor without spending any extra cash to do so.
