So here they are - three quick suppers with pasta, broccoli, and feta cheese.
• Broccoli and Feta Pasta Salad: Great served warm, hot, or cold. A few Kalamata olives spice this up.
• Recipe: Velvety Broccoli and Feta Pasta: Steamed broccoli is pureed into a pesto sauce for hot pasta. It's creamy and nubby at the same time, and a delicious way to use up massive amounts of broccoli!
• Pasta with Feta, Broccoli, and Sausage: A hearty one-dish dinner. It's really quick, too.
Each of these are great for leftovers; we made the third recipe last week and ate it for lunch or dinner on the next two days. They also use fairly inexpensive ingredients (although we do recommend searching out some really good feta cheese.) All of these are either vegetarian or easily adapted to be so.
