Have you ever tried mojo? The cuban sauce is heavy on the garlic and orange juice, and it happens to be a delicious marinade for chicken. With a little prep work, this sheet pan mojo chicken is a total weeknight win.

You have two options when it comes to marinating the chicken for this recipe: overnight or one hour before you cook it. Choose whatever works best for you depending on your schedule.

The actual process of making the mojo is simple: Crush garlic cloves with salt and oregano, then mix it with olive oil and fresh lime and orange juice. Once the chicken is sufficiently marinated in the mojo, all you have to do is throw it on a sheet pan with green olives and onion, orange, and lime slices — and let the oven do the rest!

In about 45 minutes you'll have perfectly juicy chicken with crisp, golden-brown skin. Pair with some cooked rice and you've got a tangy, flavorful dinner in under an hour. Does it get any better than that?
