Look, I like all of you a lot, so I'm going to let you in on my summer secret. Well, it's not such a big secret, since I've been preaching its charms to anyone who will listen. It's basically the perfect piña colada, and it only has two ingredients. Want one?
It depends on just two things: good white rum, and this pineapple-coconut juice from L&A. I swear they didn't pay me to write this; I discovered this stuff all my own. I spotted it at the grocery, and of course the obvious question popped into my head: "Will this make a good piña colada?"
There was only one way to find out.
I'll spare you the suspense and say yes, this is the perfect blend of juices to make a nine-second piña colada. Mix a shot of rum with this fine stuff, and ta-da!
It's not too sweet; it tastes like real juice. It's also creamy, but not too creamy — this isn't a frozen dessert in a glass. It tastes like creamy coconut, but with a shot of tangy pineapple.
As far as the rum goes, I've used various types, but my favorite is this overproof rum by J. Wray & Nephew. It's inexpensive, strong, aromatic, and hefty enough to booze up a whole glass of pineapple-coconut juice.
Of course, if you have a little extra energy, you can amp up the drink by adding a garnish of pineapple, fresh mint, or maybe a cherry. My favorite garnish is a splash of Angostura bitters — a nice note I picked up from my local cocktail bar. The cinnamon and spice set off the sweet, creamy juice and rum.
If you want to make it really easy on yourself, make a whole bottle at once. Pour out a little juice to make room, and add four shots of rum directly to the bottle. Refrigerate, and ta-da: You have a whole bottle of piña colada to drink whenever you like.
