Beautiful button mushrooms sitting in a sauce made of ginger, peas, tomatoes, and a whole bunch of spices feels like just the thing I want to make right now. The whole recipe comes together in a large sauté pan. Just serve it over some rice and you've made dinner.

This recipe also highlights an unusual herb – fenugreek. It's a little bitter eaten raw, but when it cooks down it apparently tastes and smells like maple syrup.

Because the whole cooking process for this recipe is relatively easy, it makes playing with a (maybe) new-to-you ingredient more fun.
