The next time you make a batch of chicken thighs, do yourself a favor and roast them in coconut oil. I know, I know — the "coconut oil can do everything" trope is starting to get old, but believe me when I say, in this case, it will truly give you outrageously good results.

All you have to do is lay chicken thighs skin-side up on a baking sheet, brush them with melted coconut oil, season them with salt and pepper, and then roast them in a 450°F oven for about 45 minutes.

It's really that simple — with a few basic ingredients and a hot oven, you can have crisp, flavorful chicken on the table in under an hour. Just add a side dish and dinner is ready.
