This Healthy Twist on Potato Salad Won't Weigh You Down

A staple at practically every summer barbecue, potato salad is a safe bet if you're looking to bring a simple side dish. But if you want to lighten things up a bit, you should make this twist on the starchy classic. Can you guess what the star ingredient is? Hint: It's not potato.

It's poached radishes! Ingenious, right?

We're big fans of cooking radishes, as it helps to mellow out their spicy bite. Once the radishes are soft and tender, you toss them with a traditional potato salad dressing — mayo, celery, shallots, dill, lemon — and serve the dish either room temperature or chilled.

With all the pasta salad, hot dog and hamburger buns, and potato chips at the barbecue, you won't even miss the potatoes here.
