Have we reached peak everything bagel spice yet? I don’t think so. The flavorful seasoning blend — a mixture of poppy seeds, toasted sesame seeds, dried garlic, dried onion, and coarse salt — is great on bagels, of course, but it also has way more potential. This chicken proves it.

To start, you can either make your own everything bagel spice blend or buy it from a store like Trader Joe’s. You’ll also need to brine your chicken breast ahead of time in a mixture of water and salt for either 15 minutes at room temperature or up to six hours in the fridge.

Once your chicken is brined, place the breasts in a baking dish and brush each side with melted butter — this gives the everything bagel spice something to cling to. Sprinkle a generous amount of bagel spice on each side of the chicken and bake for about 20 minutes.

After your chicken is cooked, it’s really up to you how you’d like to use it! Serve it as is alongside some veggies and a starch, sliced atop a salad, or, if you’re feeling cheeky, on an everything bagel sandwich with some melted cheddar and avocado.
