Now that the weather has significantly chilled and it's dark before you even leave work, you're probably craving comfort food when you get home — something warm and satisfying, preferably laden with cream and cheese.
Well, this soup is here to prove that comfort food doesn't have to be loaded with dairy to be satisfying. Made with cauliflower and cashews, you get that luscious, creamy consistency without a drop of cream!
What I love most about this recipe is that if you're craving this soup, you can make it at a moment's notice. Typically you have to soak cashews at least a few hours ahead (or overnight) to create a creamy consistency, but this recipe avoids that prep step entirely.
Simply sauté onion, garlic, cauliflower, cashews, and turmeric in a large soup pot. Then you just add water and simmer until everything is soft. If you have an immersion blender, you can purée the soup right in the pot. Otherwise, you can transfer the soup to a blender and purée it in batches.
While the soup is simmering, you can multitask and bake the chickpeas in the oven. The crunchy chickpeas add some protein and a nice contrasting texture to the creamy soup. And the best part? It's all done in 25 minutes!
