This Creamy Balsamic Mushroom Chicken Is a One-Skillet Wonder

Want to end your Monday on a high note? Make this creamy balsamic mushroom chicken. It's a 30-minute, one-skillet meal with crispy bacon as a star ingredient. What more could you want from dinner?

Because all the components for this dish cook in the same pan, you'll need to employ some strategic cooking. First you sear the chicken breast on each side until golden-brown, then set it aside; next you cook the bacon in the pan until it's crisp, then set that aside; and finally you add the mushrooms to the skillet to cook until tender, then you set them aside.

Now that all the ingredients are cooked and set aside, you make a simple sauce in the pan with chicken broth, heavy cream, balsamic vinegar, Parmesan cheese, salt, and pepper. Once the sauce has thickened a bit you add the mushrooms back in, followed by the chicken. Serve everything with the crispy bacon and some fresh parsley on top.
