Other highlights: I would wager that there's a salad for everyone in this book. Yes, I realize that all the recipes are vegan — I stand by my statement! The thing is that these salads are chock full of all sorts of yummy, delicious things that make the idea of salad for lunch sound like something to celebrate rather than dread. Anyone can get on board with salads like these.

I love how Terry Hope Romero takes the usual suspects of a good salad, like chickpeas and nuts, and gives them just a little spin. Like roasting those chickpeas with barbecue sauce or turning a handful of nuts into Curried Cashew Pepita Crunch (how awesome does that sound?). Romero is really the master when it comes to making dishes that burst with flavor — trust in this book and you'll never think salads are boring again.
