This Chicken & Sweet Potato Skillet Is Ready in 30 Minutes

We’re in the Thanksgiving home stretch here, and people have turkey and stuffing and mashed potatoes on the brain. But as you ramp up for the big day, don’t forget that you do have to eat dinner this week — preferably something wholesome and quick like this skillet chicken with sweet potatoes.

While this one-pan meal seems super basic — just chicken thighs and sweet potatoes, right? — it’s actually packed with flavor.

First you season your chicken with salt, pepper, garlic powder, and Italian seasoning. Then you sear it until golden-brown in some honey butter (just honey and butter melted in the skillet) and set it aside. In the same skillet you toss the sweet potatoes with some pecans and dried cranberries in more honey butter, add the chicken back in, and put the whole skillet in the oven to finish cooking.

When you’re ready to serve, just bring the skillet to the table, garnish with fresh thyme, and scoop out portions onto everyone’s plates. A simple green salad on the side is the perfect accompaniment to this simple, satisfying supper.
