Does anyone else push all the cannoli filling out of the crunchy shell and eat it with a spoon? No, just me? If you too are a big fan of cannoli filling, you've come to the right place.
This is a great late-summer recipe to whip up when you're short on time. It's quick and easy to throw together, but also super impressive. It's especially exciting for gluten-free folks who can't normally eat cannoli shells, but crave that sweet, creamy filling nonetheless.
Just fire up the grill; thread some fresh fruit onto (presoaked) bamboo skewers; and mix together ricotta, powdered sugar, pistachios, and chocolate chips. And if for some reason you have leftover dip, go right ahead and eat it with a spoon. (I won't judge.)
