It's back-to-school time, and that means making sure you have plenty of after-school snack ideas ready for hungry kiddos. Frozen chicken nuggets were a staple of my childhood, but these baked popcorn chicken bites — breaded in crushed potato chips! — would've made 8-year-old me much happier.
The interesting thing about this recipe is that it eschews the typical flour and/or breadcrumb coating for crushed potato chips, which means these chicken nuggets are gluten-free. It also means you can get creative with the flavoring here, as you can use any type of potato chip you like! Sour cream & onion, salt & vinegar, BBQ — they're all fair game.
Serve these chicken bites, warm from the oven, with the dipping sauce of your choice. Put aside a few for yourself, too — this snack is definitely not just for kids.
