These Sweet Chinese Pancakes Are Filled with a Surprising Ingredient

You've probably had scallion pancakes before, but what about red bean paste pancakes? That's right — these soft, sweet pancakes are filled with mashed red (or adzuki) beans!

The ingredient list for these pancakes is super short — just flour, water, red bean paste, and oil. Red bean paste is used in many Chinese, Korean, and Japanese desserts. You can find it in Asian grocery stores, but the author also includes a recipe for a homemade version if you feel like making your own.

And since red is considered an auspicious color in China, this is a great dessert to serve for Lunar New Year.
