Happy St. Patrick's Day! After you eat your corned beef, colcannon, and Irish soda bread, you'll need a festive treat to end the night on a sweet note. And while there are plenty of awesome green-colored desserts out there, I've got my eye on these Irish coffee brownies.
The major appeal of these brownies is that they're mixed completely in one bowl. You don't have to dirty two bowls — one for dry ingredients and one for wet — with this recipe, which means less time cleaning up and more time drinking some Irish whiskey later with friends.
Just combine melted salted butter, sugar, Baileys Irish Cream, vanilla extract, eggs, unsweetened cocoa powder, all-purpose flour, instant coffee granules, and semi-sweet chocolate chips in a bowl; spread the batter into an 8x8-inch baking dish lined with parchment; and bake for about 20 minutes or so.
After the brownies bake, you drizzle them with a mixture of melted chocolate chips and Baileys. These rich, fudgy brownies truly taste like a glass of Irish coffee — only better, because there's chocolate involved.
