Dacquoise [dah-KWOZ] n. French cake made with layers of nut meringue and whipped buttercream.
Chris' great tip on Trader Joe's almond meal reminded me of dacquoise and how much I like this kind of cake. The word dacquoise is sometimes used interchangeably to refer to the entire production or to just one of the layers of nut-based meringue. The nuts in the meringue are most often almonds, although I have used pecan meal as well.

anybody know if there's a difference between TJ almond meal and Bob's Red Mill? The Bob's site says:
Almond Meal/Flour is simply raw blanched whole almonds that have been ground into a fine powder. Use almond meal in cakes, cookies, sweet breads, and a host of other desserts. Store in your freezer to extend its shelf life.
Is the TJ's as good?
After reading the pecan dacquoise recipe with its various disclaimers against bodily injury due to molted honey explosions- I'm going to either pass- or wear a hockey mask.
