Word of Mouth: Blleflade

2007_11_05-OnionPie.jpg Blleflade n. Swiss onion tart with a flaky crust and caramelized onions.

This recipe for Blleflade comes from a feature in Saveur that explored the food culture of a little town in West Virginia called Helvetia. It was settled by Swiss immigrants who have kept much of their cultural heritage, marrying Swiss foods and tastes with Southern cooking.

We have no idea how to pronounce this (any tips from German speakers?) but we think it sounds delicious, however you say it.

In German german you would pronounce most of the letters as normal but Swiss german is another thing all together. Much less swiss german, brought to the South!

Here's the textbook german pronunciation:

boellflade - pronounce the 'oe' with your lips shaped like you would for an 'o' and try to make an 'e' sound. Pronounce the 'a' as you would the word 'ah'. Pronounce the 'e' as you would the word 'eh'. All consonants should be pronounced as you would phonetically in english.

Hope that helps!

Once you've added a West Virginia accent to the mix, I'd vote for calling it an onion tart so as to get the jump on being served a second helping. You'll want it, and there will be fierce competition.
