Aļoli [ay-OH-lee]
A strongly flavored garlic mayonniase, originating in Provence (southern France). It is traditionally served during the summer months to celebrate the saint's days of the various villages of Provence.
Aļoli contains garlic, egg yolks, olive oil, Dijon mustard, and lemon juice. It is a popular accompaniment for fish, meats, and vegetables, and compliments raw crudités and leftover grilled foods especially well.
