Aoli [ay-OH-lee]
A strongly flavored garlic mayonniase, originating in Provence (southern France). It is traditionally served during the summer months to celebrate the saint's days of the various villages of Provence.
Aoli contains garlic, egg yolks, olive oil, Dijon mustard, and lemon juice. It is a popular accompaniment for fish, meats, and vegetables, and compliments raw crudits and leftover grilled foods especially well.
