Pygostyle [ˈpīgəˌstīl] n. On a bird, the triangular or heart-shaped protuberance that supports the tail feathers.
Pope's nose, parson's nose, sultan's nose - the crispy, chewy morsel that sticks out from the rear end of the turkey is technically called a pygostyle, but one of those colloquial phrases might be what you know it by. That chewy, heart-shaped bit of a turkey or chicken is greasy but it can be a real delicacy. The picture above is of entire skewers of chicken pygostyle on skewers in a Taipei market.

I love it, but my aunt refuses to eat it from any bird (duck, chicken, or turkey) as she says it smells.
I once did get a funktified one, which you would think would turn me off to them forever. I still love them though, and its the first thing I pluck off for my "chef's snack" when I roast a bird at home.
