that's about what i am spending ($400/month) on groceries. i've realized recently that this is too much as my husband just got laid off. i'd love to figure out how to feed a family of 3 on $25/week or maybe $50/week max.

This looks delicious, and I can't wait to cook it. My husband and I loved the butternut squash-browned butter-sage pasta that was posted a few weeks back. We made it with farfalle, and although he said it's a once-in-a-while dish for him, I just might be able to eat it every day.
Anyway, this dish seems a close cousin to that one. Thanks!

I'm with Joan, $100 a week is hardly being impressively frugal, unless you're feeding 5 or 6 people. Maybe if you're including all staple items or spices in the costs. $75 or $50 for 3 or 4 would have been pretty good, or even $40 a week for 2 people, which is about what I spend if I don't have to count stuff I always have on hand. I only have grocery bills like $100, even cooking all 3 meals a day, if I am totally restocking or I have quite a few splurge items.

I made this after it was posted on Serious Eats. (I couldn't find yellow beets, so my dish is a lovely red color).
It is delicious. It also freezes well; I made far too much for one person, and just thawed some of it yesterday. Mmmm.
