We had the loveliest lunch a couple days ago. We gathered up all the leftover bites and nibbles left from two or three nights of dinner and plated them up for a lunch that was very satisfying.
We had the loveliest lunch a couple days ago. We gathered up all the leftover bites and nibbles left from two or three nights of dinner and plated them up for a lunch that was very satisfying.
We mixed a little honey and vanilla into whole-milk yogurt and served it with tiny local strawberries. We also had a cup of leftover salad, some crackers, homemade herb butter, crusty day-old bread, and a slice of excellent banana bread. Oh, and a sliced pear too. We love eating like this!
What are you eating for lunch today? Do you snack like a bird in this hot weather, or do you still like a full meal for lunch?

i brought whole wheat pasta with swiss chard pesto, and sauteed baby bok choy for lunch today. it shouldn't be too heavy, as my office is freezing today!

Today I had a pearl couscous salad with tuna, fennel, olives, herbs and lemon vinaigrette. I love grain-based salads for lunches as they keep me going through my long afternoon. A big lunch is more important to me than a big dinner, I suppose, and I have to have some kind of protein with every meal, or I don't feel quite right!

I gardened outside before eating a decent breakfast, so by noon I dug happily into leftovers! I reheated some spinach-Swiss cheese quiche and a bowl of Perciatelli spaghetti with meaty tomato sauce mixed in. Gathering a new meal from the leftovers of another family meal is so great. For me, it's not only economical, but it sort of revisits the joy of the previous family time!
