I made amazing blueberry ice cream this afternoon and enjoyed multi-colored boiled heirloom carrots with pepper and butter with a good St-André cheese and baguette for dinner.

I plan to make a roasted pork loin with fresh apricots for dinner tomorrow.

On Saturday I had homemade minestrone soup (leftovers) for lunch and stuffed shells and garlic bread.

Sunday was eggs with black bean and corn salsa and chicken tacos with homemade guacamole for dinner (I was in a Mexican mood apparently!)

This was a weekend at the beach (http://cooking-shopping-crafts-etc.blogspot.com/2008/08/bethany-beach-with-jenn.html), so there was no cooking. Just a lot of good eating! :)
