I did have my mother visiting for one night this last weekend, so not all of my meals were of the (otherwise admittedly rather frequent) five minute variety.

Earlier in the week both my parents were visiting so I made a roast chicken (Zuni Cafe recipe of course!), a tomato salad, potato gnocchi pan fried in garlic and butter, and bread pudding with a creme brulee-style sugar crust. Very homestyle comfort food.

Later, on the weekend, since my mom is more adventurous than my dad, I made Nigel Slater's coconut/ginger/chile soup with green mugwort soba noodles (I LOVE these) and a spinach salad with Annie's dressing. I also rubbed tilapia with ground coriander and baked it in an impromptu Thai marinade of fish sauce, chili oil, garlic, cilantro and crispy fried shallots. I had fig/date/anise pinwheel cookies for dessert, with homemade masala chai. I am so addicted to homemade chai; I can customize it however I like, and the evening routine of putting it together is soothing.

Sometimes it stinks living alone - I want to make the lamb tagine and beet risotto but would hardly be able to eat it all myself! :-) I wish there were more resources out there for people living alone - cooking for one with leftovers! I am assembling my own little bag of tricks, but sometimes you really have to get creative to cook for one without massive weight gain.

I just found a book that I want to get called "Small-Batch Baking"

It's all recipes for single or double serving cakes, pies, and small batches of cookies. I saw it in a local bookstore. I just cook for my husband and I and we have some of the same problem. We STILL have leftover beet risotto!
