Weekend Cooking: How to Make a Good Sandwich

2008_10_10-Sandwich.jpgOne of our favorite memories from childhood is watching our dad make himself a sandwich on Saturday afternoons. He was a true master and this was serious business. Here's what he taught us:

 
 

There are four elements to a Good Sandwich:

1. The Bread - This is key. It's what binds the whole sandwich together. It can be store-bought Wonder-bread (appropriate in certain situations) or it can be a home-made sourdough, but it must be chosen with care and with the end result in mind.

2. The Spread - Here we're talking mayo and mustard, or if you're feeling fancy, pesto or red pepper spread. This acts as a moisture barrier between the bread and the fixings so that the bread doesn't get too soggy too quickly.

3. The Main Ingredient - This is the main focus of the sandwich and what is providing the real sustenance. Whether it's heirloom tomatoes or leftover roast chicken, this is the whole reason why you started craving the sandwich in the first place.

4. The Secondary Ingredients - These are the supporting actors of your sandwich and aren't meant to take center stage. Instead, they add texture and flavor contrast to the main ingredient. They can be lettuce, tomatoes, sprouts, or a slice of good cheese.

Sometimes we crave a particular sandwich (BLTs come to mind!), but other times we just like to open the fridge and let the inspiration come. Thanks, Dad!

I like to take sunflower rye. Add a thinly sliced Spanish cheese (usually an Iberico, sometimes an Manchego) and thinly sliced tomato. Salt and pepper the sandwich, and then add slices of avocado. I cover the whole thing with sprouts and serve.

My other favorite sandwich is fig preserves with cheddar cheese.

My goodness, there are so many: a burger pattie (beef, turkey, whatever) topped with a fried egg on an onion roll; grilled eggplant, thick slices of tomato, a bit of butter and honey mustard for lubricant, on toasted whole wheat; cornbread with tart cherry jam and country ham; and my absolute favorite, corn flour fried shrimp on buttered, toasted baguette with slices of dill pickle and a few shakes of hot sauce. I could go on all day.

I love all sorts of sandwiches, but my go-to cure for insomnia is a classic PB&J on wheat, with a glass of milk. Once I eat that, I'm out like a light for the rest of the night! Luckily I don't have to resort to sandwich making in the middle of the night very often.

My favorite is a cheddar/swiss/tomato/sprouts with avocado on whole wheat with mayo.

Other favorites are:
gyros,
croque monsieur (ok, ok, grilled ham & cheese, especially if it is on an onion bun),
pb&j with grape jelly (or honey, or tomato, or sometimes peanut butter with cheddar cheese) on honey wheat,
grilled cheese on some good white bread with plenty of butter and garlic salt,
pimento cheese,
classic meatloaf sandwich with lots of ketchup,
cucumber/walnut/cream cheese/honey,
and a 'ranch turkey' (on nice soft, soft bread with thin slices of turkey, some kind of cheese, red onion, tomato, and poppy seed cream cheese).

I get insane cravings for peanut butter & banana sandwiches...

But my favorite sandwich has to be criossant scrambled egg cheese bacon... YUM.

Big pimpin':

1. The classic fried egg sammich. An egg fried over hard, with ketchup on two slices of toasted bread. If you're not too hung over, a slice of American cheese melted on it, too.

2. A classic croque monsieur (HTF you spell it), preferably with a bit of Dijon, preferably sitting at an outdoor cafe, preferably in Paris. Preferably with good Euro coffee or wine, preferably with the person you're fucking madly in love with enjoying the same right across from you.

3. I'm a sucker for a good old tangy, mayo-y tuna salad, too. With lettuce, on a croissant, ice cold. With chips on the side.

4. Peanut butter and banana with milk, YEAH.

Gimme a 'C', a bouncy 'C'!

Scramble eggs. While they are starting to cook, spread mayo on soft white bread. Add salt, pepper and two thick slices of tomato. Throw the eggs on hot, slap bread on and eat before it dissolves. Delicious. That's a dad recipe.

My favorite sandwich is the most fattening thing ever. Croissant, honey mustard, avocado, havarti, and honey turkey. I haven't had it for years though.

1. my signature sand:
whole wheat bread
ground mustard (one that's not TOO spicy but still has kick)
sliced tomato
ground black pepper
kosher salt
dried dill weed (the pepper, salt, and dill stick best to the tomato)
sliced cucumber or dill pickle
2 slices turkey
lettuce
and just little touch of heaven


i'm also currently trying to perfect the apple/bacon/peanut butter combo

Both my dad and I cannot eat a sandwich unless the bread is toasted... of course, my picky preference is his fault as he's the one who only made us sandwiches only on toasted bread all through my childhood.

Here are my faves in no particular order:

1. Croque monsieur - no bechamel though. I put a slice of cheese on top.

2. Tuna salad with lots of lettuce on whole grain bread. My tuna salad is made w/ tuna in olive oil, mayo, & relish.

3. Homemade pimiento cheese between two slices of sourdough

4. Lebanon bologna, white american, and miracle whip (not mayo) between two pieces of white bread

The best sandwich I ever had was from a small sandwich shop in Carmel, CA when I was there with my familiy on vacation. I've recreated it several times and everyone raves about it. (We called it the Carmel Sandwich, since none of us can remember what it was named at the restaurant!) It packs a TON of flavor, and it's a great balance between savory and sweet.

Sourdough bread
Dijon mustard
Mango Chutney
Green leaf lettuce
Thin sliced red onion
Thin sliced red apple
Rare to medium roast beef, sliced thin
Stilton and Cheshire Cheese (I can sometimes find these 2 cheeses alternating together in one wedge, called Stilshire, or cheston, or something like that:)

I felt creative one day and had a great PB Sandwich- toasted rye bread, pb and homemade chipotle/date hotsauce. (from Padima Lakshmi)
The hot sauce gives a kick to the pb, and is very delicious. sweet and spicy. Highly recommend trying this

some faves:

roast turkey, sliced avocado, sharp cheddar, and a thin schmear of thousand island dressing on multigrain toast

grilled PBJ, particularly with blueberry preserves (difficult to eat without a glass of milk!)

fried all-beef bologna with american cheese and mayo on white toast

thin-sliced cucumber with butter on thin rye

My favorite: Toasted bread with a large smear of veganaise (the good vegan mayo), an over-medium fried egg, and a splash of Frank's hot sauce. Great. Now I have to go make one.

I am a serious sandwich lover. One of my favorites:

Soft rye with coarse-ground mustard, black forest ham, spinach, tomato, and goat cheese. It's simple, but delicious.

Side note--personally, I think that the supporting ingredients are just as important as the primary ingredient.

my dad's recipe:
brown bread mayo (miracle whip on his, but, ew.) black pepper english cheddar sliced cucumbers. simple and very addictive.

Favorites:

For lazy brunches:
Scrambled eggs, fried ham, and guacamole in a pan crisped tortilla wrap - eat immediately!

For summer picnics:
Smoked salmon/lobster, egg, baby spinach and potato salad (wasabi mayo) in a tortilla wrap

Bruschetta: Fresh diced tomatoes, roasted garlic cloves and basil, red wine vinegar and olive oil. Spoon onto grilled sourdough as you eat.

To make workmates envious:
Leftover roast chicken, stuffing, red leicester cheese mixed in with mayonnaise on sourdough

Sliced sausages, left over potato gratin and spicy gravy in a burger bun

I love using tortilla wraps. Often I will just wrap leftovers in them (like spaghetti bolognaise, shepherds pie etc) then cling wrap as a lazy way of not having to use/wash out lunchboxes. It also means I can eat stuff one handed as a sandwich while running around at work ;)

My favorites tend to rotate with the seasons, but I always love:

1) Grilled (homemade) pimiento cheese, with a little shredded lettuce or greens added after grilling
2) Fried green tomato BLT on toasted challah with roasted red pepper remoulade
3) Smoked salmon, watercress, dill, and cream cheese on a grainy bread or bagel
4) Grilled brie (or other mild soft cheese) with apples
5) Cuban/Medianoche
6) Spouse's homemade turkey reuben

Now I'm hungry...and long before a respectable hour to eat!

Great sweet breakfast sandwich (just don't try wearing anything other than loose-fitting pajama pants all day):
- Eggo waffles
- Nutella
- Banana slices
- Honey and/or peanut butter

One sandwich that's typically dinner after an evening Trader Joe's run, with a couple variations depending on taste or what we happened to buy on that trip:

baguette w/ either genoa salami or prucuitto, slices of fresh mozeralla or asiago cheese, roasted red peppers or roasted eggplant, red pepper and garlic spread. Maybe some fresh basil if we have some and perhaps a drizzle of balsamic.

a classic bacon and egg sandwich, with toasted bread, a really runny fried egg, just before eatting the yoke popped and spread around the rest of the sandwich with tomatoe ketchup. i like my bacon more floppy and succulent than crispy.

also- a sandwich i still eat but invented when i was 10. white bread, honey roast ham, american cheese and.. marie rose seafood sauce (or thousand island)

others include the breadless sandwich (attkins style) which is just basically cheese and ham rolled together with yet again marie rose seafood sauce in the center.

wow...i am SO hungry now after skimming through all these ideas!

one of our faves...a classy grilled cheese with granny smith apples, bacon (or pancetta), and a really good swiss, made stove-top with some help from wax paper and a sandwich press (think: heavy pan with cans of beans to weigh it down).

don't forget to do home-grown sprouts for a healthy and texture-riffic addition to any savory 'wich!

-Bobbi's Garlic Hummus


A flavor sensation in my mouth!!! Highly recommend Bobbi's Garlic Hummus and Rudi's bread. Delicious!

The tuna melt is my version of heylucy's pb&j glass of milk -- the ultimate comfort food.

The secret to a mind-blowing tuna melt is, without a doubt, a good olive-oil-packed canned tuna. My current obsession is Genova brand: cheap, available at most supermarkets, and absolutely delicious (beats most imported oil-packed tunas, I promise).

A crusty bread is best here, but a packaged rye or pumpernickel will do just fine. I swipe the bread with spicy mustard, but use no mayo, since the olive oil in the tuna adds more than enough moisture (and fat). I dump about half a can of tuna onto the bread, cover it with a slice of sharp cheddar or pepperjack, and top that with a couple of slices of fresh tomato.

Then the sandwich goes in my Cuisinart panini maker, and a couple minutes later emerges a little slice of yummy comforty heaven.

Also good with fresh spinach, but what isn't?

(Strange sidenote: I have this weird compulsion about slicing my sandwiches diagonally into two triangle-shaped halves. Actually, it just looks prettier this way.)
