Remember how I told you that I am going the crazy route and making my own wedding cakes (and ice cream)? Turns out I'm not alone in this craziness; reader Raquel wrote in with photos and a sweet note about her own homemade wedding cakes.

Here are a couple of pictures of the cakes I made for our wedding. We used an old, a blue and a new cake stand for each of the three cakes and decorated them simply with one flower each. I made 2 coconut and one massive chocolate - all had white chocolate buttercream.
It was a lot of fun baking with my sister and since I have lots of cake experience it wasn't too stressful. I even made a strawberry chiffon cake for 40 at our pre-wedding BBQ a night or 2 before (can't remember now....)
I highly recommend doing it if you have the inclination, just make it simple and beautiful and don't put too much stress on yourself.
Love the nod to the old tradition of something old, something new and something blue. Those big flowers are pretty fab as well. What beautiful cakes, Raquel! Thank you so much for sending them in.

My mom made my wedding cake because she loathes an expensive cake that doesn't taste good. It was carrot cake with cream cheese frosting. She decorated it by making the icing super-smooth and put fresh cut flowers on the top. Looked professional and tasted great.

I made my own wedding cake...a stacked, three-tier chocolate cake with chocolate mousse filling and then decorated with rose petals. I found it to be sort of an escape from the wedding craziness to get in the kitchen and be distracted by my baking.
