Virtual CSA Box: Sugar Snap Peas

2007_05_01-CSA.jpgSugar snap peas are among the last of the cold weather vegetables showing up in CSA boxes this week. Sugar snap peas grow well in colder weather and can even adapt themselves to light frost conditions. Depending on your climate these may just be harvested now, or you may have seen these two months ago.

They have an edible pod and they are delicious and addictive eaten straight off the vine. Lucky you, if you're finding these straight from the farm in your CSA box! You can snack on them raw, or cook them quickly in hot oil, like these Sesame Snow Peas. More ideas below...

There's more gardening and nutritional info on sugar snap peas at the OSU Agricultural Extension, as well as a recipe for Creamed Sugar Snap Pea Soup. Over at Stephen Cooks he combines two CSA box staples with this recipe for Baby Turnips and Sugar Snap Peas.

We love the sound of this dish of Scallops with Snap Peas, and this side dish that includes shallots and fresh thyme.

Do you do anything fancy with your fresh sugar snaps? Or do you just like them raw?

I love them raw, I keep them on hand at work to satisfy the craving for the crunch of chips.
