Video: Grilling Black Bass with Eric Ripert

Browsing New York Magazine's website this morning, we saw this video of Eric Ripert grilling fish on a slate tile...

 
 

His technique is incredibly simple — just some herbs, garlic, and olive oil — and he claims the slate allows the fish to cook properly without burning (and, we'd assume, losing any loose seasonings in the flames).

The presentation looks beautiful, too. Just throw that big fish on a platter and let everyone dig in.

Where may I purchase a slate tile for this practice?

I was wondering the same.

I would think that you could buy it at any store that sells tile.

But, I would make sure that it is just 100% real slate. I don't know the specifics but there is a tile sold as slate that is called something like "Indian" slate and it is a sedimentary tile made up of layers of fragile clay or sandstone-like layers. The worry with that is that it is not smooth like true slate, has natural pigment that comes off and would most likely spall with dramatic changes in temperature.

We had to go to Home Depot last night and they sold slate tiles there for less than $3.

BTW - that video actually made my mouth water that fish looked awesome!
