Recipe: Lemon and Honey Fruit Salad

It's May and the sun is shining here - is it where you are? We celebrated the sun with this simple fruit salad of melon, strawberries, and bananas, tossed with a tangy dressing of lemon and honey and just a hint of nutmeg. It was a sunny start to our day, but would be just as good in the evening with a dollop of crème fraiche or ice cream for a light dessert.

 
 

Lemon and Honey Fruit Salad
serves 6

1 cantaloupe
1 quart strawberries
2 bananas
2 tablespoons lemon juice
3 tablespoons honey
1/2 teaspoon fresh grated nutmeg

Cut the cantaloupe in half and scoop out the seeds and pulp. Cut into eighths and cut the rind off with a small paring knife, then chop the fruit into chunks. Hull the strawberries and chop them in half. Peel the bananas and chop as well. Put all the fruit in a large bowl

Put the lemon juice and honey in a small bowl and microwave for about 30 seconds. Whisk until the honey is completely dissolved, then whisk in the nutmeg and pour over the fruit. Toss and serve immediately.
