The stems of our cilantro stay fresh and hydrated, but the leaves are free and fluffy. We like this method of storing herbs, as opposed to wrapping them in a damp paper towel and putting them in a plastic bag, simply because they are front and center in the fridge (not hidden in a drawer) and we don't forget to use them.
Any other tips out there?

I use this method as well but, cover the herbs with the produce bag from the grocery, tying it around the glass. I bought parsley 2 weeks ago, forgot about it, opened my fridge last night and it was good as new, so I used it.

thanks rmarcus for the tip -- when I do this with my herbs, they tend to wilt, but I think you've solved it
