Summer Vacation Tip: Freeze Pre-Baked Scones and Muffins

2009-06-01-FreezeScones.jpgWant the taste of homemade baking while on vacation without all the fuss of packing the ingredients or even the need to actually, well...bake? Not a problem! Here's what we've started doing in recent years when heading off on a weekend getaway...

 
 

After a few mishaps with key ingredients left behind as the car pulls away, we realized that we have much better success with actually doing vacation baking ahead of time. We bake batches of scones and muffins, wrap them individually in plastic wrap, and then collectively in aluminum foil before sticking them in the freezer. They'll actually keep for several weeks frozen this way.

The morning of departure, we pack everything in a cooler - as an added bonus, the frozen scones and muffins double as freezer packs to keep everything else cool! By the time we arrive at our destination a few hours later, the baked good have usually only just started to thaw. If we're planning on eating them the next day, we stick them on the counter (or leave them in the cooler, if camping) to finish thawing. If not, we pop them back in the rental kitchen freezer.

Reheated in an oven or even just a microwave, these breakfast treats taste just as good as fresh. When camping, we wrap the muffins in tin foil and heat them in the coals of our campfire. Don't forget to take off the plastic wrap first, though!

Our "first meal there" is always some variation of a tin foil dinner, thrown in the coals as soon as they are ready. We like salmon, steak, sausage or ground venison with potatoes, peppers, carrots, beans, onions, etc. and lots of pepper and herbs. Quick and easy to assemble at home where there is space to spread out the ingredients, and not having to cook after a long drive is A .

Heh - I read "pre-baked" in the title of the article as "not yet baked" and was curious to see how you froze a raw muffin!! :)

I have a vacation house and freeze batches of cookie dough and crisp topping to keep on hand - to make something special and yet, low-fuss.

I actually freeze the scone DOUGH, not a baked scone! I make the dough into a round, and cut them into 6 or 8, but keeping them in the round. I put it on a baking sheet, freeze until hard, and pop it off the sheet. I wrap in plastic wrap, stick the round in a ziploc and when I'm ready for them I get them out while the oven heats! They taste like I just made the dough, but I didn't have to spend the time that morning. Always convenient if company is in town, and it could work for taking on Vacay too! :)
