We use our scraper whenever we want a little more control than a regular spatula would give us.
Made of stiff plastic, these scrapers are still flexible enough to wedge under that first brownie out of the pan. The curved side can be used like a spatula to scrape the last bit of dough from a bowl, while flat edge can smooth the surface of cakes or brownies before baking.
We also like that we can use this tool to portion, scoop, and scrape food from pans and dishes without fear of scratching nonstick coating. The scraper makes a quick job of pushing purees through a tamis or strainer when we want a smoother consistency and the plastic won't tear the fine mesh.
These kinds of scrapers can also be found made of nylon or silicone and are readily available at most kitchen supply stores. Here are a few online sources:

When you are kneading dough it helps get all the bits that stick. It helps to roll cinnamon rolls tightly. Anything sticking to the counter you can use the scraper to get it up. I use mone all the time.

If you're my old commercial baking instructor, one's always in your hand, like an arm extension. It was like "go go gadget bowl scraper!" He'd have a bunch in his front coat pocket, using them to measure out ingredients and scrape everything up off tables and out of bowls.

i use mine to cut shortening into flour when making pie crusts. i find it works beautifully and the rounded edge fits just perfectly in my mixing bowl.
