Look! Potatoes Under the Grill Grate

2008_07_17-potatogrill2.jpgRunning out of room on your grill? Try this — wrapping potatoes in a double layer of foil and sticking them under the grill grate while you cook everything else. We watched a friend do this last weekend, only it's not just potatoes in those bundles...

The potatoes are sliced and layered with thick onion, then topped with big pads of butter and lots of salt and pepper. The cooking is completely hands off and very forgiving. Just nestle the potatoes in the charcoal and leave them there for an hour or so. (Notice the fading light in the photo, below...)

2008_07_17-potatogrill3.jpgThe onions caramelize slightly, the potatoes stay moist, and you end up with a sweet, salty, buttery tumble of good stuff.

This is how my parents always cooked potatoes - but we made sure to drop a few teaspoons of water into the foil packet as well, it helped the potatoes cook faster, and kept the foil from welding itself to the skins. So easy and tasty!

My Korean friends and ILs all do this while making Korean bbq - only we use Korean sweet potatoes. They are delicious this way!

i tried these last night and they were awesome! be very generous with the onions. it is also very tasty if you add some olive oil in the mix!
