Good Question: How to Cook With Leftover Cranberry Sauce

2007_12_19-CranberrySauce.jpgI have a ton of leftover cranberry sauce! What can I do with it? I'd love to bake or cook something...

Any suggestions for good recipes?

Thanks!

If it's Thanksgiving cranberry sauce we hope it's in the freezer - even though it's basically a jam we're not sure how good it would be by this point.

That brings us to our first answer: freeze it in little lumps for eating throughout the winter. Here a few more recipe ways to use up leftover cranberry sauce:

• Cut butter, oats, cinnamon and sugar together to form a rough crumble topping. Sprinkle over cranberry sauce in ramekins and bake for about half an hour or until brown and toasted.
• Toss with a couple tablespoons of sauce, oil, pistachios and Trader Joe's Grapefruit Vinegar as a dressing for bitter winter greens.
• Stir into yogurt and add nuts for a good breakfast.
• Top rounds of goat cheese or Brie with cranberry sauce and bake, then serve with crostini or toast points and walnuts on top.
• Make our Hungarian Pastry with cranberry sauce instead of raspberry jam.

Any more ideas for Heather?

Make a basic muffin batter, substituting almond extract for vanilla. Fill muffin cups only half way, drop in a Tbsp of cran sauce, cover with a little more batter and a sprinkle of sliced almonds. These come out tasting almost like danish. I love them.

Thank you for the suggestions!

And no, the sauce was not from Thanksgiving (that would be way back in October here in Canada!) but from just this past weekend. My husband and I decided to try cooking our first ever turkey for friends on low pressure, non-holiday, "Turkey Saturday". Didn't need to worry about ruining Christmas though, everything turned out great!

Makes a great marinade for chicken as well...sort of a sweet and savory dish....Or as a compliment to stuffed pork chops!

First, you should make a cheesecake. You could cook down the cranberries so they have a nice texture and top the cheesecake with it. What do you think about that?
