15 More Ways to Flavor Roasted Chickpeas

011409-chickpea.jpg It's been almost a year now since the entire food contingent of the internet went cuckoo for Cocoa Puffs roasted chickpeas. Since then home cooks have been tossing them in all sorts of flavors! Some are sweet while others are savory, but no matter which one you choose, they all look dyno-mite!

 
 

We spent a ridiculous amount of time searching out different flavors to accompany the toasted nuttiness of The Chickpea. Everyone cooks them up just a little bit differently, from cooking times to flavorings, to actual cooking methods (dry roasting vs coating in oil).

We're personal fans of dry roasting (no oil) and then toasting our spices in a pan and adding our olive oil to the spices right before the chickpeas come out of the oven, infusing the oil with all the tasty spicy/herb-y goodness. The residual heat of the chickpeas bakes the flavors in nicely as you toss it all in a bowl. No matter how you like em, they're super tasty, good for you and ridiculously easy to make! Here's just a few:

Garlic, Pepper, Rosemary
Soy Sauce, Sesame Oil, Chili Powder
Tomato Juice, Curry Powder
Brown Sugar, Rosemary, Cayenne Pepper
Cinnamon, Cumin, Chipotle Powder, Smokey Sea Salt, Smoked Paprika
Corriander, Cumin, Chili Powder, Sweet Paprika, Cinnamon, Allspice, Ginger, Cayenne Pepper
Lime Juice, Chili Powder, Pepper, Cilantro (which is pictured above)
Sage, Roasted Garlic

how about thyme? would that be weird? i bought a bunch for the lemon garlic chicken and don't know how i'll use it all!

When I made these, I simply couldn't stop eating them. However, I felt so much better about it than a potato chip binge. I love that roasted chickpeas so easily lend themselves to a variety of flavor combinations.

We always toss our chickpeas with a little good olive oil, some nutritional yeast, plenty of black pepper and a little salt. Then roast away!

But this is a great list, so many good ideas! I think I'll be roasting some chickpeas tonight.
