We've so enjoyed having Lisa Yockelson as our guest expert on baking with chocolate this week. We're giving away a signed copy of her book to two readers, along with a big package of Scharffen Berger baking chocolate goodies so they can get started on recipes from the book. ChocolateChocolate is a veritable bible of chocolate recipes, tips, and instructions. It's full of sophisticated and homey desserts alike - chocolate indulgence and bittersweet baking are all tied up in this book. It's a treat!

And the Scharffen Berger package is also a treat. In each winner's package they're including two kinds of ganache (bittersweet and gianduja, the hazelnut blend), 3 9.7 oz baking bars, a package of their famous cacao nibs, and a tin of natural cocoa powder.

I just made my first set of chocolates the other day with a bittersweet green tea ganache enrobed in milk chocolate. I was successful enough (despite a bit of uncertainty about the tempering) that I'm already dreaming up a new, even more delightful concoction. My ambition is to use up the Andes Candies baking chips that have been in my cupboard since Christmas.

My dream goes like this: A bittersweet ganache infused with mint leaves that surrounds a layer of Andes chips. I will pour the ganache -- created with cream, butter, corn syrup, mint leaves, 73% bittersweet chocolate -- into the pan in two tranches, putting down a thick layer of Andes mint chips in the middle. Andes Candies buried in minty bittersweet ganache! The glory of it! The ganache hardens as a mint-chocolatey Andes sandwich, which I will cut into 1" squares and dip in 41% milk chocolate.

Could anything be more divine? If only I had some green transfer sheets, I could top them with a leafy green pattern to make them look the part. But if I can just get the chocolate to stay tempered while I dip (quite a balancing act, I've discovered) they'll look--and taste!--fabulous anyway. If I can pull it off, these might become my brother's birthday present . . . if I don't eat them all first.

When my husband is home (hehehe he's in the Navy so he's gone a lot) he likes to do fondu night. He always has to make the chocolate fondu though because I am afraid I will burn it to the pot. I would like to be able to surprise him once and make it for HIM. :)

I'd love to attempt my grandmother's Death by Chocolate cake recipe but I'm not brave enough yet. Like all the best old-timey recipes, it's all in her head and she guesstimates at all the ingredients and amounts. It always tastes amazing though.

The only cooking I think I have done with chocolate is cakes and hot chocolate. I did manage to break my blender trying to chop chocolate for chocolate ice cream once. Now I stick with vanilla ice cream.

I would like to make Jacques Torres' famous chocolate stove that he inivented while at La Cirque. It is so creative! I would fill the little pots on top of the stove with caramel and fruit sauces and put a beautiful opera cake in the chocolate box under the stove. This is the perfect chocolate dessert!!

On the other hand, I am also torn between this and Fernand Point's Marjolaine cake. It is such a beautiful creation and so historic, I get really emotional when I think about the historical significance of his work.

I always have the makings for amazon cake in my pantry (so much better than any store cake mix!), but I've never made a frosting to really complement it. Maybe a mint frosting with dark chocolate curls to give the cake that denseness it's missing?

If we're talking pure chocolate recipes, I don't have a go-to brownie recipe: I rarely make them for myself, and for parties/potlucks, other people tend to call dibs on bringing brownies.

I will admit, however, I've never used chocolate in anything savory (chili, beef, etc). So that'll be my real answer!

I have always wanted to make a rich chocolate cake with edible gold leaf. I saw a restaurant story many years ago about such a cake and it was called 24KT cake. It also cost 25.00 per slice. I bet it was worth every penny.

I've always wanted to make truffles from scratch...and devil's food cake...and chocolate souffle...and chocolate ice cream. There's certainly nothing wrong with chocolate chip cookies and brownies, but I desperately need to work on things that are a little less ordinary when it comes to chocolate...

There's way too many things to do with chocolate to narrow it down to one thing!

For my 30th birthday I made a simple flourless chocolate cake that melted in your mouth. I am guilty of making simple layer cakes with chocolate frosting (my grandmother's recipe) for every occasion. What I would really like to try, however, is a simple chocolate pot de creme. And then one with mint. And perhaps one with lavendar ... but I would really like to master the basic one first.

I have always wanted to make a chocolate cake with dark chocolate ganache poured over the top. I would decorate it with putting a doily on the top and sprinkle powdered sugar on it then lift off the doily for a lovely pattern.

A long time ago, I found a recipe called Frozen Chocolate Frango in an old issue of Family Circle magazine. Well, I carried that recipe around from place to place until I finally lost it without ever once making it. Years later, I thought of searching for that recipe on the Web. It's there! I have made oodles of chocolate things though I would like to make a warn chocolate chipotle cake that a friend of mine described eating while she was in the southwest, it was a layer cake with a thick frosting and was served warm. It sounded Scrumptous!

A friend made me a birthday cake once with dozens of alternating layers of chocolate mousse and chocolate meringue, decorated with rolled-up meringue cigars. O.M.G. I'm not even that crazy about chocolate and I ate like half the cake. I'd try to make this.

I've made lots of things over the years with chocolate but never an old fashioned, homemade chocolate mousse. I make my great-aunt's sour cream chocolate cake and everyone wants that when I make chocolate or bittersweets or old-fashioned chocolate pudding. But I love real homemade mousse and I'm going to make it someday despite what those who eat what I make beg for instead.
