Not one thing right now, but soon as the temp rises, I'll pull out the ice cream attachment to my kitchenaid stand mixer and make sorbet and ice cream galore. I hope to make some unusual flavors like corn and avocado this year!

I also use my microplane grater several times a day, usually to grate parmesan.

Another item I use all the time is my Williams Sonoma egg poacher -- I know, I know, it's not poaching eggs directly in water, but you keep all the white this way, and it's essentially foolproof as long as you don't forget about it!

My chef's knife, which is currently in dire need of a new edge :( Besides butter/steak knives for dining and a few errant cheese spreaders, I only have one knife. I lovely German steel 7" blade that I got as a present. I use that knife for EVERYTHING! I don't think I could live with out it really.

(Also high up there is my beloved copy of the Joy of Cooking. I got it for my 13th birthday and it may have been the first cookbook that was mine and not stolen from my parents collection. Certain pages are stuck together and there is a section with a big green stain that I hope is from a food coloring/fondant/petit four experiment, but its still the go to when I need to look up the basics of how to make something.)

I'm just now getting my kitchen going-- as a fresh-from-college newlywed, I'm still waiting on silverware and plates!

Right now, my mom's hand-me-down cast-iron skillet (three generations of use now, and it's beginning to show) is probably the best thing that could have happened to my short-staffed cooking; it makes our meals delicious enough to counter our paper-and-plastic place settings.

Still, as soon as I get an upright mixer... well, let's just say I do love my cakes.

My Ikea chef's knife! I'd always had hand-me-down knives, and so I didn't know how a chef's knife was supposed to feel in your hand - they were always old and blunt and hard to handle, so for years I chopped and sliced and diced everything with steak knives. Oh my god! Now that I have a great knife that feels right I use it nearly every day. I've even smashed up nuts in my mortar with the big, heavy handle when the pestle doesn't cut it. I love my knife!

The most used utensil in my kitchen is (well, I don't know what you call it, but) like a collender spoon. It's metal and has a lot of holes in it for scooping up corn, green beans and other veggtables without getting all the juice. I also use it for making my girls roman noodle lunches for my girls...they love the flavor, but don't like a lot of juice with it.
