Thursday Giveaway: Mangos!

In our pursuit of eating locally and seasonally we have few special exceptions in our produce. One: coffee. Two: bananas. Three: mangos! When it comes to mangos we are grateful for the global trade that brings us this exotic fruit. We only splurge on it occasionally, as a special treat, but when we do oh how we enjoy it!

Today in partnership with the National Mango Board we're giving away two big boxes of mangos. Read on for mango recipes, tips, and how to enter this giveaway.

Oh hell yes. I've actually never cooked with mango (did try to grill them last week; not a disaster but not really worth it) because I just devour them as soon as they come in sight. However, a friend makes an incredible mango salmon dish, with which I would celebrate the receipt of this wonderful giveaway.

My favorite mango dish: We made this a lot on vacation in Costa Rica:

1 mango, peeled, pitted
Costa Rican Rum

Put in blender and blend until smooth, drink with straw

Another mango recipe for the summer which I made a couple weeks ago:
Mango Mint Lemonade Popsicles
Slice Mango into small pieces
Place mango into popsicle molds, alternating with finely chopped mint. It's OK to squeeze the mango in there pretty tightly. Top off with prepared lemonade. Freeze. The frozen mango is the most lovely texture and the lemonade gives the popsicle a nice kick!

My favorite mango dish is well--mangos! There's not really any way to improve something that's perfect. My 8 year old son will go gaga if we win these, it's his favorite food. He quite enjoys mango sorbet as well.

I'll be making my Chicken and Mango wraps with Guac! And combined with all my herbs and veggies growing in containers, I have everything to make some killer fresh mango salsa!

Simple is best here: mango with a squeeze of lime!

Also, a treat I had in the Philippines, a kind of freezer cake. Layer white cake (we bought sponge cake, but I bet angel food cake would be great) with cream and mango, then put in freezer 'til thoroughly chilled.

My favorite is grilled mango salsa - slice mangos, brush with olive oil and grill until lightly browned. Chop red onions, jicama, and add to roughly chopped mango. Finish with chiffonade of basil and mint. I also add a few drops of green tabasco for some heat.

Woo-hoo for Mangos!!!

My recipe: Spread cream chesse on 2 tortilla shella, add diced mangos and jalapeno between them, and toss on the grill for a bit.

This treat is crisp, sweet, and packs a punch!

Funny because I just had a mango and banana smoothie for lunch. But, by far my most favorite recipe is a black bean, brown rice and mango salad-great w/fish tacos.

2 champange mangoes, pureed with powdered sugar [depends on sugar content]

pinch of cinnamon, pinch of cardamom, pinch of ginger powder

heated until bubbly, strained

poured over pineapple-coconut ice cream, topped with cashews.

I really think the best thing to do with mangos is make salsa. They are great in drinks too, but I can never manage to make anything more complicated then salsa without just stuffing them in my mouth, so salsa it is.

mango lassis are classic.

I grew up in Jamaica climbing mango trees, picking the ripest looking fruit, peeling the skin off with my teeth and eating it while sitting on the limbs.
Being Jamaican, I love all things spicy. We used to make Mango "Peppa-Pot". Pretty simple recipe:

An under-ripe mango
Minced Scotch Bonnet Pepper
Dash of salt and black pepper
and a tiny bit of acid (lime juice or vinegar)

Let it sit in its juices and contemplate it's existence (if you can actually resist the urge to eat it right away).. then enjoy.

Mmm.. Id devour several portions while sucking air in through my teeth to cool my mouth down..

Fav mango dish I've ever had: @ Pigalle in Boston, I had this chocolate gelato dessert with these tiny mango drops and they were spicy and oh man, it was just delicious.

Well, ever since I was a little kid, I've always eaten it as is, or slightly cold out of the fridge with a spoon. But, I do adore mango salsa and mango-based smoothies, so I guess those would count.

And if I had an ice cream maker of some sort, I'd try recreating the mango gelato that I get in Little Italy in the summertime!

We love mangos in our household. We eat them plain or over ice cream or mix them in a smoothie. The absolute best mango dish I ever had is the fresh mango ice cream that a local Thai restaurant makes and serves over sticky rice. It is an awesome dessert: sticky, sweet, creamy and fruity. Yum!

Mine is a Cooking Light recipe for Chicken with Curried Mango Sauce -- look for it on their website (cookinglight.com). It's easy and delicious as hell. I like to add chopped fresh cilantro, but it isn't necessary.

I prefer to eat them raw, greedily, right off the knife blade. When I got a case of Alphonsos that were too squishy to slice, though, I made sherbet, which was mighty nice. The recipe was from Christopher Kimball's Dessert Bible.

Mango teriyaki ribs!

Smash up overripe mangoes until pulpy, mix in some teriyaki sauce, honey, soy sauce, ginger and black pepper. Marinate, then cook in the oven at 350 or on the grill. Careful to not let the honey burn. Continue to spoon/paint the marinade on the ribs as they cook.

Garnish with a few slices of mango! YUM!

Just cold mangoes -- My son loves to eat "pop-up" mangoes. I cut off half of the mango from the pit, cut a grid in it and, pop! A pop-up mango, ripe and ready for his lunch box. I get to gnaw the rest of the good stuff off the pit myself!

My favorite mango dish is a toss up between our homemade mango salsa and our homemade mango ice cream. I'll go with the ice cream since we are making some this weekend....and we are going to add cinnamon this time. We add different things each batch and we can never decide which one is our favorite. I can't say it is actually a recipe but with each of my three pregnancies I have been mango crazy. So much so that not a single mango reached an actual plate. They get pealed, and then devoured with the seed still intact. In fact when we found out we were having a third child my husband exclaimed, "Of course! That explains all the mangoes you bought this week!"

I absolutely love love love mango. In the summertime, there's always mangoes in my house. Of course, plain mango is absolutely delicious in itself. But ripe mango dipped in salt and chili powder is great too. And you can't go wrong with mango sorbet. Or mango salsa. Or mango anything for that matter. =)

I love my grandma's mango pudding. I haven't made it in awhile but it's basically mango puree, gelatin and heavy whipping cream. My husband also makes a wonderful mango salsa that he puts over tilapia. But mango anything is good.

Mango-papaya salad:
-1 green papaya (shreaded/julienned)
-1 mango (shreaded/julienned)
-2 Roma tomatoes, cut into wedges
-1C long beans, cut in ~1 in. pieces
-1/3 C dried shrimps
-2tbs lime juice
-1tbs shrimp paste
-8 garlic cloves
-5 to 15 Thai chilies (depending on how much heat you can take, personally I think 15 tastes best)

to make:
1-Add long beans, garlic, driedd shrimps, and Thai chilies together, and pound in a mortar.
2-In a large bowl, gently mash lime juice in with shrimp paste and Roma tomato wedges. Then add contents of the mortar, papaya, and mango. Mix and enjoy.

Serve with cold cabbage wedges and/or milk on the side for those who can't take the 15 chilies versions.

Mango Salsa--hands down!

Put oil, chile powder, garlic, cumin and a little bit of oregano over medium-high heat. Add corn kernals and sautee until hot. Add to a bowl of diced red onion, mango, and avocado. Pour some lime juice over the top. Add some cilantro.

Enjoy!

My summertime favorite is mango popsicles - chopped mangoes, a little orange juice to loosen things up, and full fat plain yogurt for some creaminess. Throw it all in the blender, pour into molds (if you can keep yourself from having a smoothie) and freeze! It's like the creamsicle you remember having as a kid but so much better.

Does chopped fresh mango count as a recipe? My 7 year old loves mangos just the way they are. He probably wouldn't mind if I made a sorbet though.

i would love to have enough mangoes to make mango chutney.
at home in trinidad, my grandmother has a mango tree, so we always had excess mangoes when they were in season. but here, they are so expensive that i cannot bring myself to buy them for anything but eating as is. which is ironic, because they are nowhere near as good as the ones at home.

I just learned how to cut up a mango recently; before that I'd never taken one home from the grocery store.

I like mangoes in dishes with a savory element; like most people it seems, mango salsa is a huge fave. I haven't gotten beyond making a smoothie myself though!

Ok, first of all, the National Mango Board has a great part of their website where there are videos of how to cut a mango. It's super useful.

Second of all, what I would make is a ton of my favorite fruit salad: Mango, avocados, grape tomatoes, basalmic vinegar, and feta cheese. YUM.

Black bean and mango burritos.
In one (small) pan, saute some onion in a bit of olive oil. Add a can of drained black beans, a couple shakes of cumin and pepper, and diced garlic.

In another pan, saute some diced mango in a teeny bit of butter (not necessary if it's a nonstick pan), just long enough for it to release the juices.

Spread some beans and some mango on a tortilla and top with cheddar cheese. YUM.

The first time ever I've heard of mangoes was on a snowy December in my home tome in Siberia. I was a small kid, and it was a time when "see smth - get it or it's gone". So, some time before the New Year we found mango juice (in 1L slass jars) in our store. We bought some - as much as we could carry. When we got it home, we opened one and it was an entirely new world for us. So, we took our sleds (small kiddie ones, but we often used it to go "shopping" in winter months) and went back to the store. You could not tell what color the floor was in our corridor, that's how many bottles we bought. The first time I saw a real mango was a few years ago, when I moved to the States. It's still kinda a novelty for me, so I eat it fresh or in smothies. But I will remember that "mango-juice winter" forever :)

I usually just eat them raw since they are such a rare treat for me. But if I was to win a couple boxes I think that there would be some mango salsa for fish tacos and some sort of mango mixed drink. Oh, and a fruit salad with raspberries and blueberries and mango! So many wonderful options!

I used to live in the Caribbean and this is a recipe I picked up from a very good friend of mine who is from Jamaica:

Bev DeCosta's Mango Salsa:
1 or 2 Mangoes (not too ripe), cubed
1 can Black Beans
1 can Pinto Beans
1 can Kidney Beans
1 Bell Pepper, diced
1 medium Red Onion, diced
8-12oz of Corn (frozen, canned or fresh)
12-16oz Tomatoes (canned is fine), diced
1/4-1/2 C Olive Oil
1/4 C Lime Juice (fresh is best!)
Cilantro (as much or as little as you like), chopped
1 T Sugar
1 t Adobo Seasoning
Salt & Pepper to taste

Mix in a large bowl, chill, and serve with tortilla chips.
Always a hit. Yum!
